Old Fashioned Apple Dumplings

Being the child of a Bloomsburg University Alumni, a sibling of two alumni's, and currently being a student at the University, the area and town of Bloomsburg became very home-like. I'm thankful for that because it made the whole college experience a whole lot easier. (I'm basically at my second home) But at a very young age, I was introduced to the famous Bloomsburg Fair. To the town of Bloomsburg, it's like another holiday. I mean, the high school is off of school for the whole week! Soooo it's a pretty big deal around here. And it's a perfect week to contribute to that Freshman 15! So when fair week comes around, there's a certain food stand that calls my name...the apple dumplings. I can't count how many different apple dumpling stands there are but I'm almost positive I have eaten at all of them over the span of many visits...which may not be a good thing, but oh well! The cherry on top to these fair apple dumplings is the cinnamon ice cream. Yeah..you heard me. Cinnamon. ice cream. Although I love some homemade vanilla ice cream on my apple dumplings, the cinnamon ice cream puts dumplings on a whole new level. But as we are slowly moving into November and the cold months, I started having fair withdrawals, especially from those wonderful dumplings. But have no fear! I have a super delicious recipe that I think tastes exactly like those heavenly dumplings from the fair! I hope you give them a try and enjoy! :)

Apple Filling:

1/2 cup. brown sugar

1 tsp. cinnamon

1/4 tsp. nutmeg

2 Tbsp. butter, softened

8 medium, peeled & cored, granny smith apples

2 (15 oz.) packages of refrigerated pie crusts*

Syrup Ingredients:

1 1/2 cup. sugar

2 cups water

1/4 tsp. cinnamon

1/4 tsp. nutmeg

1/4 cup butter

1.) Preheat oven to 375°

2.) Combine sugar, water, cinnamon, and nutmeg in a medium saucepan. Bring to a boil over medium heat while stirring constantly. Reduce heat and simmer for 10 minutes while stirring occasionally. Remove from heat and add in the 1/4 cup butter. Stir in butter and set syrup aside.

3.) Combine the apple filling ingredients in a medium sized bowl. Mix sugar, cinnamon, nutmeg, and softened butter with a fork until you have a crumb-like consistency.

4.) In the pie crust boxes, there should be 2 separate pie crusts wrapped. Cut both in half and form each half into a ball. Place on a lightly floured surface and roll into 8 inch circles.

5.) Place each apple in the middle and fill the empty core with the crumb like mixture. Fold the dough over the apples, pinching the top to seal.

6.) Place the apples in a lightly greased 13x9 baking dish. Bake for 40-45 minutes

7.) Serve warm with vanilla ice cream or any of your choice and enjoy!
